Tangy Rocca Salad

This salad is full of essential vitamins, iron and loads of good fat. This crunchy salad will want you having more.

Here's the recipe...

INGREDIENTS

  1. 3-4 Small Kiwis ripened (If they are soft when pressing they are ripe)

  2. 1 Avocado

  3. 3 Cucumbers

  4. 2 Medium sized tomatoes

  5. 6-7 Lettuce Leaves

  6. 1/2 cup chopped Rocca leaves

SEASONINGS:

  1. 1/4 tsp crushed pepper powder

  2. A dash of olive oil (optional)

METHOD:

  1. Wash thoroughly all the ingredients

  2. Take a large bowl

  3. Peel and de-seed the Avocado and cut it into 1.5 cm cubes. Peel the kiwifruit, and cut it into 1.5cm cubes. Cut the tomatoes and cucumbers into small pieces as well. Each ingredient once cut toss them together into the bowl

  4. With your hands, tear the lettuce into thin stripes. Add these to the other ingredients along with 1/2 cup of freshly chopped rocca leaves

  5. Give them a good mix

  6. Crush the pepper powder using a mill and drizzle the salad with some olive oil

  7. Mix it well and serve immediately
